Wine
On a plot of 5 hectares of medium textured stony soil, grape varieties of Sangiovese , Canaiolo, Malvasia and Trebbiano are cultivated whilst ensuring the greatest care that these noble plants require.
From this careful cultivation derives a grape of excellent quality that is partially intended to be sold as such, and in part subjected to artisanal winemaking, with respect to one of the traditions that characterize the region of Tuscany.
By this process we obtain an IGT rosso Toscana, a pure red wine with a decisive flavour and with an alcoholic content of 12% vol, to be enjoyed young. It goes well with good hearty food which further enhances the organoleptic characteristics.
It is possible to purchase wine at the central structure of the farm; it is available to buy in Bordeaux bottles, bulk form or in practical 5 or 10 liters wineboxes, that will guarantee extreme conservation of the wine, preventing contact with air.
Extra Virgin Olive Oil
Our olive groves stretch over 10 hectares of land with approximately 3000 native plants of several varieties, such as Correggiolo, Leccino, Pendolino and Moraiolo.
This variety of cultivars not only allows an ideal pollination but also gives an incredible flavour to the final product.
The spicy and bitter taste of our oil is synonymous with quality. These aromatic notes are in fact due to the presence of polyphenols; antioxidants that protect the oil from oxidation that are most beneficial for the health of the cells of the human body. They have antitumor effects, are positive for the cardiovascular system and all other diseases linked to aging.
The oil is sold in ½ L, 1L, 3L and 5L cans or 0.75 L bottles.
By selling the product direct from our farm we want to provide the customer with the opportunity to relate to the passion that goes into the production of every single bottle.
Milk and Cheese
Our sheep rearing is almost exclusive to the Comisana breed, an Italian dairy breed that draws its origins from sheep breeds of the Mediterranean (asian-african), cross-bred with the Sicilian sheep breed, these animals have an extremely docile nature and possess very nice features.
Every day, we approach these animals with the utmost dedication, ensuring their welfare is of the most importance to us. Our sheep make use of the pastures and feed continuously on fresh herbs, hay and grain products from our land, this goes on to ensure the superior characteristics of their milk.
The sheep's milk has an extremely high protein content, containing almost double the protein of cow's and goat's milk, (i.e. from 5.5 to 6.5 %). The proteins of the ewe’s milk contain a higher percentage of casein than that of cow’s milk, which implies a greater yield and greater ease in the process of cheese making. The fat content is greater in respect to cow's milk (i.e. between 6 and 8 %); the fat globules are small and therefore tend to escape in the serum during the processing, thus producing a ricotta cheese with more fat and much more flavour in comparison to that of a cow.
